Cynara cardunculus.  Dried leaves are used as a tonic tea or in nutritional supplements to support health.  These thistles, also known as cardoon, grow wild at our organic farm.  We cut the leaves and air dry them in the open air.  They are certified organic by OCIA and the Real Organic Project.
